Very low in fat, sugar, and total calories, but high
on taste and healthy ingredients, our creamy vegan ice
cream is like no other! It's quick and easy too.
INGREDIENTS:
1 cup creamy vanilla soymilk (chilled)
3 tablespoons soft silken tofu (chilled)
1 tablespoon soy protein isolate (unflavored)
2 1/2 tablespoons unsweetened cocoa powder
1 to 1 1/2 tablespoons over-ripe mashed banana (chilled)
1/2 teaspoon natural guar gum powder
1 teaspoon maple syrup
1 tablespoon natural liquid sweetener (agave or maltitol)
DIRECTIONS:
In a blender, combine the soymilk, guar
gum, and soy protein isolate, then blend briefly. Add all
remaining ingredients, then blend very well. Pour into ice
cream maker and follow instructions on its use. For
best texture, consume the final product as soon as
it is ready. Relegating it to your freezer for later
consumption may result in an icy, non-creamy texture,
because we have not added the usual array of
commercial anticrystalization ingredients.
Makes nearly a pint (about 3.5 half-cup servings). Per serving:
