Wheat-free, Oil-free Zucchini Bread

It's the perfect time of year for zucchini bread, and this recipe sure does it the right way.

INGREDIENTS:
10 Medjool dates, pitted & chopped
1 cup non-dairy milk
1 1/4 cups old fashioned rolled oats
3/4 cup dry millet
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground (dry) ginger
1 3/4 cups unpeeled, grated zucchini
1/2 cup grated apple (unpeeled)
2 teaspoons vanilla extract
3/4 cup walnuts, coarsely chopped

 

 

DIRECTIONS:
1) Preheat oven to 325 degrees F. In a small bowl, cover the chopped dates with the non-dairy milk and set aside to soak.
2) Dry ingredients: grind oats and millet into flour in your blender (a high-speed blender will do a finer job) and place into a bowl. Add baking soda, baking powder, cinnamon, nutmeg, and ginger.
3) Wet ingredients: In a new bowl, place the grated zucchini and apple, and vanilla. Blend the dates and the non-dairy milk until very smooth, then add this
mixture to the new bowl and mix with a fork.
4) Combine the wet and dry ingredients and mix thoroughly, folding in the chopped walnuts at the end. Pour into one standard size loaf pan (9x5-inch) lined with parchment paper, or use a silicone baking pan.
5) Bake the loaf for 65-70 minutes uncovered. The bread will be done when the top of the loaf is an even medium brown -- and there should be cracks in the top too. When you remove the loaf from the oven to test for doneness, insert a toothpick deeply. If it comes out clean, the loaf is done. Let cool for 5 minutes before removing from the pan, then let the loaf cool further on a cutting board for another 10-15 minutes before slicing.

California's Foie Gras Ban is Upheld by Appeals Court
(LA Times) -- A three-judge panel of the U.S. 9th Circuit Court of Appeals unanimously upheld a district judge's refusal to block the law, which prohibits the sale of products made from birds that have been forced to eat abnormally large amounts of food to enlarge their livers. The court's decision means the ban, which took effect in July 2012, may continue to be enforced. read more...

Chimpanzee Art Contest Winners Announced
(HSUS) -- Brent, a 37-year-old retired chimpanzee from Chimp Haven in Louisiana, has won first place in the HSUS
Chimpanzee Art Contest, which featured paintings created by chimpanzees living in sanctuaries throughout the US and generated more than 27,000 votes. Famed primatologist and conservationist Dr. Jane Goodall reviewed the entries and selected a painting by Cheetah as the best in a judged prize category.
